Ogres and Ogrekin tend to have pretty low Will saves. At the Grauls, for instance, most of the ogrekin have +1 or +2 -- even Mammy and wossname in the basement top out at +6. So a sorceror with a lot of Charm spells and a meat shield to hide behind is going to shut down almost every Graul in 1 or 2 rounds. If the sorceror has Suggestion, it's even worse.
Any thoughts on how to deal with this?

How about letting characters who specialize in enchantment have some fun? "Mind-Affecting" is one of the types of magic that has a LOT of monsters that are completely immune to it; undead, constructs, vermin, oozes, and lots of other creatures as well. It's good to let characters who specialize in mind affecting magic to be able to actually USE their magic now and then.
If you're really worried that a mind-affecting caster will ruin the adventure, go ahead and swap out feats for Iron Will or Improved Iron Will, but really do try to avoid making an already sometimes difficult type of magic to use even less useful.

I see the force of that, but that's not the concern here. I have a PC sorceror who's not an enchantment specialist, but who does have Charm Person.
It's not a game-breaker. But given a module full of powerful-but-low-Will monsters, it's definitely going to require some spackling on my part.
I'm not looking for fixes like "swap in Iron Will", though I might use those if need be. I'm thinking more like, how to deal if the sorceror charms the first Ogrekin encountered and asks him for a download of everything he knows?
-- I do have a couple of ideas. One might be, the ogrekin invites his new friend -- but only his new friend -- home to meet Mammy and the family. If the sorceror goes inside that house alone, wackiness is likely to ensue.
Another might be, if several ogrekin are charmed, they invite the PCs to sit down with them for dinner.
Ideas along these lines (and similar for dealing with the ogres) are welcome.

One thing to remember is that charm person is not a carte blanche to have the charmed creature do everything the caster wants it to. Its attitude changes to "friendly", but not all the way to "helpful". I don't tell my friends everything about me and my family, for instance.
Both of the ideas you mention would be excellent ways to handle this. I'm thinking you don't really need any more help :)

Ogres are giants, not humanoids, so they wouldn't be affected by the spell; I've always seen Ogrekin as a crossbreed that's somewhere between humanoid and giant... so at the very least mixing in some Ogrekin that lean more towards their Ogre heritage and are therefore classified as giants and thus immune to the spell should liven things up a little.
But as I said, their heritage isn't fully humanoid, so boni or outright immunity to spells targeting humanoids would fit the monster concept perfectly.

Giant is a subtype of Humanoid in the Pathfinder RPG, so they are affected by the same effects.

Given how the Grauls treat their family, I shudder to think of the "games" they would play with a friend.(...)
That's what we had with the Laura character (Varisian Bard with the Lust/Fertility Tatoo) who used Charm person on Grauls and Kreegs.
She was worried and careful (and also somewhat freakishly enjoying the rush) of being on the edge of their "interpretation and expectations" of friendship and actually even used flipping from one "charmed friend" to another to get them against each other. It was a good time and it didn't make the spell a "safe way to deal with it" and yes some less-expected ones made the save: Sweet Papa Kreeg wasn't charmed by the little lady! But he did get a bad shot from the Holy Smite!

For saving throws in general: the spell itself says if you or your allies are attacking or threatening the target, they get a +5 to the save. I would say that would apply to almost any situation where the target can see an ally of the caster with a weapon drawn. If they all go in with weapons sheathed, and the guy makes his save, thatll make their fight that much harder.
For the hypothetical info dump: I would imagine Mammy wouldnt be giving out tons of info to her ignorant kids. Mammy and maybe the brother/dad of the group would be the only ones worth trying to get info out of. Others might have bits of stuff theyve overheard here or there, but they probably couldnt even pronounce names correctly like of important baddies, let alone remember details of the plot.

Another complication to this is that half of the enemies only speak Giant, and most of them have a low INT. It's like talking to a six-year-old in many cases IF you speak the same language. You're not going to get the clearest answer to any question just on general principle.
Charm Person doesn't turn the affected into a well-spoken professor that can give a friendly lecture.
