How is time tracked? Is it the same calendar that we currently use? January thru December? What is the current year?

The Inner Sea calendar has the same amount of days, weeks, and months as the calendar we use on Earth. The names of the days and months are different, though. Full details can be found in the upcoming Inner Sea World Guide. The "current year" is 4711 AR.

So, more precisely, it's currently Wealday the 16th of Calistril, 4711 (Absalom Reckoning) on Golarion.
So do the moon's phases follow those of the real world along with an identical cycle of eclipses?
Absolutely.
No one at Paizo is smart enough to know how a moon of a different size or mass or distance from the planet or with a different lunar cycle would affect the world, from tides to lycanthorpes to methods of keeping time. Therefore, Golarion's moon is the same shape and size and has the same orbit and cycle as Earth's moon. Lets us focus on telling stories rather than trying to figure out lunar cycles.

What's great is that you didn't do it because you wouldn't be able to apply astrophysics to it. So many other people would just decide to have 5 moons 'because it's cool', and then ignore the effects that they would have on the planet.

I did the lunar Cosmology for Talislanta years ago, which had something like twelve moons, each of them a different color. This was established before I started work on it. After looking at the astrophysics, I declared that all the moons were exactly the same size and placed in perfectly synchronous orbits since that was the only way to keep the tides from going like a mix-master. I also declared that the moons were tinted different jewel tones because it pleased the gods and left it at that.
A friend, who was a geologist, was left to explain why there were geysers on top of plateaus.
