Looking for ideas on variant classes, archetypes, orders, bloodlines, etc.

That's a fair amount of stuff! Neat.

My only specific notion from my quick read-through is that for the Zealot cleric variant, the Grace of the Gods weapon enhancement option seems to indicate that you choose one of these options, but doesn't state how or when.

I would recommend that the type of DR your favored weapon overcomes is chosen when you prepare spells for the day, and remains until changed, which will be no sooner than when you next prepare spells.

What I have so far:
Cavalry Mage - Wizard which gains a mount instead of familiar and adds mounted feats to the bonus feats, new Mounted Casting feat
Master of the Hunt - Ranger more focused on his companion
Void Master - Wizard loses school for focus on SR and anti-magic
Courtier - Rogue focused on palace intrigue
Siege Engineer - Fighter that focuses on siege engines
Primitive Warrior - Fighter that emulates dinosaur attacks
Purser, Seneschal - Inquisitor, real basic change Intimidate to Bluff or Diplomacy
Sapper - Rogue with no sneak attack but bombs instead
Vermin Shaman - Druid shaman variant altered to wild shape into vermin with a vermin companion

Zealot - Cleric that loses one domain for more of a combat focus
Tracker - Inquisitor without spells but gains favored enemy and animal companion
Tainted Evoker - Sorcerer with no bloodline but evocation based abilities

Order of Arcane Guardian - Cavalier based on fighting magic users
Order of the Alpha Dog - Cavalier who proves he is the top dog

And again would like some ideas to make some more.

Added Golarion inspired archetypes:
Blackfire Wizard - Wizard that bonds with robe and focused on the planes, new Universalist subschool
Imperial Union of Breeders Herder - Mount instead of animal companion, new combat style, new combat feats
Odeber Descendant - Anti-paladin that loses channel energy and gains poison use and other abilites
Red Mantis Guard - Fighter that has attended the Red Mantis school and specializes in the sawtooth sabre
Riftwarden Tracker - Ranger that favors planar terrain
Sczarni Smuggler - Rogue without trapfinding and abilities to help with smuggling, new rogue talents
Son of Skinsaw - insane Cleric with no channel energy and gains poison use and other abilites
Sweettalker Bard - Bard with his mouth sewn shut

Changed some of previous archetypes due to playtest feedback.

Still looking for ideas.

I haven't taken a look at the mechanics yet, but at a quick glance I like the decsriptions and names of your archetypes; I think Paizo should definitely take a look at them. :)

For example, just a week ago I was thinking about how to create an NPC druid similar to vermin lord from BOVD (and I ended up going with a Pestilence bloodline sorcerer).
