The Exiles fought a bunch of "ghouls" in my last session of my high-level drow game. Rather than creating custom stat blocks for all of them, I did my usual dirty trick of filing off the serial numbers of existing stat blocks and used them for these "ghouls."
Here's Hook Mountain Ogre #1, with faded denim clothes and fireman-style suspenders, flesh like a ghoul for my drow game. Stats are t-rex (CR 9) with the young creature template (CR -1, to reduce its size, technically I should have made it even smaller to suit this Large ogre, but whatever) and the advanced creature template (CR +1, to bring its CR back up to 9), plus a type change to "undead." Net result is an "undead" heavy-hitter with swallow whole. (It hooks people with its ogre hook, then drops them in its mouth to gulp 'em down.)
Next are the three ghouls from an old Call of Cthulhu set, slightly unfinished (I need to touch up the bases and finish the skull under the book guy). Girallons are normally CR 6, so I added the advanced template to make them CR 7, and three of them together is CR 10. Plus a type change to "undead," of course. As the PCs are 14th-level drow nobles, these were the weakest critters on the table, and Rob's chain lightning fried them before they could do any damage.
I painted the flesh of all the ghouls in this encounter (eleven altogether) the same way: a base coat of purple, with a drybrush of medium gray, followed by a drybrush of Reaper's "Fair Maiden." The net effect is flesh that looks bruised and weird, and sorta dead, yet clearly still fleshy.

My DM and I have been using mostly plastic minis for monsters, we've come to the conclusion that the Terror Wights are our favorite for most 'meaty' undead types.
We use Cursed Spirits and Sacred Watchers for incorporeals, my collection existed before the translucent plastics were used, though I recently acquired 2 Lurking Wraithes.
