Being essentially crafted of leather with metal plates sewn into it, would the Armored Coat from APG benefit from either Mithral or Adamantite?
As an aside, how does the armored kilt function with these materials? Would a mithral armored kilt still increase the armor category by one (light to medium)?

On the first note, I would say that it is compromised of enough metal to benefit from those metals, why not go crazy.
But as far as increasing the category by one I am afraid that it would bump it up from medium armor to heavy armor, incurring all things associated with it.

Now for a third question...
How would they interact if both were worn?
The kilt says it would add +1 to AC, while bumping the weight category by 1 position (i.e light to medium). But then the coat states that you take the best AC and worse penalties (armor check, max dex & ASF), when worn over another set of armor.

The coat and the kilt do not play together separately, you would take the coats AC bonus.
Together, the armor is now neither of the two original parts, it is heavy armor with one more AC than the coat.
Mithral would then apply as if it was heavy armor. So Mithral Armored coat with Armored Kilt is Medium Armor (that requires heavy armor prof) with +5 AC, Max Dex +4 and ACP 0. It would weigh 17.5 lbs.
