Grave of the Fireflies is most certainly a hard movie to watch but one of the best as well. Not a fantasy - its a WWII drama about two kids starving to death so go into it forwarned.
There is a reason Cowboy Bebob is on everyone's list. Its one of the best series out there.
I don't think anyone has mentioned one of my favorites, Azumanga Daioh which had the added advantage of appealing to my wife as well. Its about high school girls and I know that sounds cheesy but its very, very funny. Another one my wife also enjoyed watching with me was Best Student Council.
Blood is an interesting series. And let me second anything by Studio Ghibli though Princess Mononoke is my favorite.
If you want kid friendly, Angelic Layer is a decent series.
For fantasy, The Twelve Kingdoms is just about the best out there and one of the few Anime series I've given five stars to (Azumanga Daioh actually being another 5 star choice of mine).

I'm surprised no one mentioned Full Metal Alchemist. Amazing series, we've watched it twice. The 10 year olds have watched it now, they loved it.
It's being retold in a new series now Called Full Metal Alchemist: Brotherhood. Watch the original first including Return to Shambalah.
Samurai 7: An anime based off of the Seven Samurai.

Actually more like +10. There are few anime series I have bought, this is one of them.
Record of Lodoss Wars If memory serves, it's based off the director's personal D&D campaign, and you can tell the characters are very Red Box edition. With Elf being race and class rather than just race.
I'm personally not an Akira fan, it's too over the top for me.
I also recommend the Studio Ghibli films as well. Spirited Away is spooky and fun, My Neighbor Totoro is still one of my twins favorites. As is The Cat Returns.

I agree with a previous poster though that I too probably prefer Fullmetal Alchemist: Brotherhood (not that the 2003 anime is shabby by any means mind you).

I'll second "Best Student Council" for comedy/married couple watching. (Azumanga Daioh goes without saying.)
