I am looking to start a game with two other players and was wondering if anyone had a recommendation for a stand-alone adventure; scenario; adventure path that might be suitable for a smaller group. The players don't really want to run multiple characters and I would prefer not to run an NPC all the time. I am willing to make some adaptations to the adventure if necessary to accommodate the smaller party.
Any good adventures out there that would fit the bill?

Our group tends to reduce the CR of encounters a bit should only 2 or 3 players be available. It usually doesn't add too much to preparation time either.
With a few tweaks Crypt of the Everflame should be fun, but

I usually have only 3 players - in fact, one of them is not able to play half the time, so it's just two.
I do run an GMPC, which I find enjoyable and useful. The character takes a role the others didn't want to fill, and I can make him my mouthpiece, voicing concern over foolish choices (they don't have to listen to me, just like they did the other day in SD, an error that might cost them dearly yet, but still) without playing Voice From Above.
Other than voicing some concerns and subtly guiding the party, the character stays in the background during "roleplaying scenes", and often takes a more supportive role in combat as well.
That way, I make sure not to steal the PCs spotlight.
But generally, you can run Pathfinder modules and APs with only three characters. You might have to adjust a few encounters, but generally it's fine.
You can make up their lack of a 4th party member by giving their characters a bit more power than you otherwise would, some suggestions:
Encourage them to use a combination of characters that covers all angles.
