Real life is a drag man.
As a DM I usually use the time to tweak the adventure I was going to run, or start work on the next adventure (even if it's just tweaking encounters for a pre-made one). If I'm a player and there's still some folk free we'll usually catch a movie, play some board games or head to the pub.

Very occasionally I'll catch up on my study.
Sometimes it's a relief; after weeks of real life and multiple consecutive weekends running around, once in a while a game cancellation means rest. Sometimes those of us who are still available will just gather and do something else sociable, since it's being social that's important.
In our case, our group has not met for four or five weeks, and I have been looking to it with great joy. The group will most likely meet again on a day where I must work. "Puppy Dog Sad Eyes"
On the bonus side, my house work is all done leaving me the remaining seven days of my holiday mostly free. Yeepie!
