Looking into the following for my Pathfinder campaign:
Pathfinder Corebook (of course).
Available classes:
Barbarian:
*Bard:
Fighter:
Monk:
*Paladin:
*Ranger:
Rogue:
*Lose spells
Two prestige classes, mage and priest, allow access to wizard and cleric spells respectively. Based off idea from WotC's Complete Warrior splat book.

Houserules:
Players can decide what is their classes Strong, Poor saving throws. Thus, a fighter can make Will its Strong saving throw instead of Fort.
Players choose most of their PC's class skills. Paladins, for example, must have Knowledge (Religion) as a class skill. Bards must have Perform. Otherwise, the player chooses the rest of her PC's skills.

If I were you, I'd have a look at Iron Heroes. Since you already have classes in mind, you might not be too interested in theirs, but things like the skill challenges can be quite useful and interesting for martial characters. Incidently, the book also has a low-magic setting spellcaster too if your players are pretty eager for that low-magic cleric/wizard replacement.
