Just wondering, as Urgathoa is not just the goddess of undeath and pestilence but also of gluttony (I see her as a female Mordiggian from Clark Ashton Smith's The Charnel God), would it make sense to give her the Undeath and Hunger domains from that book, possibly as some sort of prestige domain(s)?
Come to think of it, she sounds like a natural for the Pestilence domain too.
Any advice will be appreciated.

Those Domains do make sense for her, but I'd recommend swapping them out for the Magic, Strength and War Domains, to keep her at the same five Domain options total as the other gods.
(Or keep one of them extra, say, Magic, in addition to Undeath, Hunger and Pestilence, and make sure to add one other core or non-core Domain option to each of the other 'big' gods, like Gozreh and Sarenrae.)
The writers seem to have deliberately chosen to not have a Golarion pantheon that included lopsided Domain options like Wee Jas, with *three* whole Domains, next to Obad-Hai, with *six.*
I'm fine with gods having six Domains or whatever, so long as none of them are stuck like poor Heironeous, with three Domains, and two of those alignment Domains! (The various demigods and demon lords and archdevils and daemon horsemen can continue to have less options, only four Domains or whatever.)

I would be against adding Gluttony. Have you SEEN her avatar in Gods and Magic? Skin and bones my friend, skin and bones.
Of course, she IS a goddess of gluttony. Her problem is that she eats and drinks and eats and drinks and it just pours right out of her onto her feet. So to help satiate her hunger, she sends her minions out to gorge themselves for her.

Back when she wasn't undead yet, she used to gorge herself and then throw it all up again. She took all that to a whole new level, persuing it with religious fervour. After one week-long orgy, she finally starved to death. And became undead.
Or so it is said. By someone.

I figured Urgathoa might have started out as a goddess of ghouls weho ultimately became "the" goddess of the undead. After all, she's got the unending hunger and love of sickness and filth that characterize D&D ghouls.
That and I want the poor forgotten ghouls to get some love for once.
(Umm, not like that.)

Urgathoa actually started out as a goddess of vampires, who are just as gluttonous as ghouls in a way.
That said, we've also got a demon lord of ghouls AND a demon lord of vampires as well.
As for ghouls getting some love... check out "Into the Darklands." There's a whole nation of ghouls in there.

Point by point:
Okay, I see your point, though I still like my ghoul connection. I'm just a big Clark Ashton Smith/Lovecraft fan, I guess.
Thanks for the info on demon lords for ghouls and vampires.
And I will get Into the Darklands, eventually.
Thanks again.

If you're a big CAS/Lovecraft fan, you should DEFINATELY pick up Darklands.
