We're playing our first 4e game in a few weeks and I just rolled my stats in front of the gm.
16, 16, 15, 11, 10, 5
He's going to be fun!
My first choice is a paladin, and second a star pact warlock. Is either a decent, viable possibility with these stats? Do you have any tips on assigning them?
Given how bad the 5 is, and how ok your other rolls are, I would focus on the 5 and look at how it would affect each stat, and how this helps to shape your character concept.
ie.
Strength: physically weak.
Dex: Clumsy, always getting in the way
Con: Physically frail, low hitpoints, susceptible to disease, etc.
Wis: Weak willed...easily swayed
Int: Dumb...'nuf said
Cha: No personality, (even deformed if you take Charisma to also account for physical beauty).
Of course, this is all based on the idea that you are concerned about character concept :)
If you are looking for advice on how to mitigate the 5, then I would look at class first, and then decide which stat to use as a dump stat.

Both seem solid options given the split stats - though really, any classes are viable with those. Have you given any thought as to race?
For a paladin, I'd recommend going with Dragonborn, for total stats as follows:
Str 18, Con 10, Dex 11, Int 5, Wis 15, Cha 18
Nice mindless fellow, devoted to justice, able to smite enemies and heal allies, etc.
For a warlock, both half-elf and tiefling would make nice options. Here is a set-up for the half-elf, after racial mods:
Str: 10, Dex: 11, Con: 18, Int: 15, Wis: 5, Cha: 18
You've got the stats to go with Star Pact, and make equal use of both Con and Cha powers. And someone who makes bargains with strange powers seems a good candidate for low wisdom. Pick up a wizard power with your Dilettante power - or pick up Enfeebling Strike and the paladin multiclassing feet for some surprise melee ability.
Alternately, go with a human Star Pact warlock:
Str: 10, Dex: 11, Con: 18, Int: 15, Wis: 5, Cha: 16
You lose the charisma bonus, but you are still perfectly able to use charisma powers. In fact, with the human extra at-will, you can grab Eyebite - and be able to target Fortitude, Reflex or Will whenever you want. You have an extra feat as well, which is good, since you have a number of good options - like Improved Fate of the Void (an absolutely awesome feat) as well as the various human racial feats (Action Surge, Human Perseverance, which are also fantastic choices.)
Character's biggest downside will be low AC, though Shadow Walk will help with that (and having two At Wills that can discourage or prevent being attacked, for that matter.)

If you can assign those stats to any ability score, you can basicly play any class you like. Each class has two primary and one secondary stat associated with them in 4th edition. Use the 16's as you primaries, the 15 for the seconddary, and drop the 5 into whatever score you feel like roleplaying as low.
A fighter would be Str, Dex, and then Con
a Warlock Cha, Con, and Int,
a Paladins Str, Wis, and Cha, and so on.
Just read the first couple paragraphs of the class and it'll tell you which stats are the most important.

The more I think about it, the more Wis 5 grabs me. I can get the party in so much trouble by muttering about angles and tentacles and stirring the tea with my shoe at inappropriate moments. Well, appropriate for me since the stars tell me it's vital.

Well chosen! I also recommend you take a look at last month's Dragon magazine, which has an entire article on the Star Pact, with new powers, feats, a paragon path and an epic destiny - as well as a ton of flavor and neat concepts.
As for a warlock guide, albeit one that I don't believe covers the new info, this one seems a pretty comprehensive discussion of all the PHB material: Warlock's Guide on the Wizard Forums.

Also, I should mention: If going human, you can go with either Con or Cha as your best stat, especially if grabbing Eyebite as an at-will. Take a look at all the powers first to see which feel right (or just decide based on which feels better for the character!) You'll want to have both high and keep boosting them both, but either one is viable as your 'best' stat.

The party has to be good or neutral, so I can't go too crazy. I read a great idea somewhere which I'm nabbing though - he's totally naive and weird stuff happens when he's around. Occasionally he sees or hears things, but while I as a player will be using his powers on stuff, the character will often be surprised as to what happens, and wandering around in his own little world :)
