The +2 Wisdom also makes them stronger of Will, more resistant to things that mess with their mind. It gives them a better understanding of religion, and it means that Dwarven Clerics (and to a lesser extent, Paladins) are often forces to be feared.
Really though, I think Dwarves have +2 Wisdom because they are the wise old men of the mountain. It seems pretty fitting to me. I think a more reasonable question might be: "Why does Wisdom enhance Perception?"

Why does a good wisdom help perception? The way I see it, wisdom means being centered, knowing your mind, having a unity of mental focus. Not only does this lead to clearer thinking (though not necessarily cleverer thinking) it also leads to being less distracted by the useless and irrelevant which means better perception of the things that matter.
