....That's about how far I got to creating this fine establishment. Anyone have any ideas as to how much delivering letters (orally or written) would cost!??

I'd say have the proprietor(presumably Jedit) have a very specific way he runs the horses, in that he cycles them one way and won't sell to anyone who won't do business his way. Probably out of concern for overworking the horses.
If you take this trait, the most logical way for him to cycle would be First In Last Out. Basicly, he sells/rents the horses nearest the door first, and each time one is brought in, its put in the stall furthest from the door, moving each up the line as one is sent out.
