Ok, lemmee get this straight:
You start a play by post thread by creating a dungeon. Then, on the thread, you ask for characters of a certain level. Then, when the characters are made, and you have the right number of them, you do the adventure as normal, and trust the players to be honest?

One would hope the players are honest, but there are places like Invisible Castle that allows dice rolls to be recorded.

How does one go about the business of starting/joining one? And how do they know ye arn't lying?
There a couple sites that host dice rolls and can have the results linked to for honesty. Invisible Castle seems to be the more popular site and is the one I use in both the PBP games that I am in.
Here is a couple links to the 2 PBPs that I am in for you to read and get an idea how it goes. Posting on other people's PBP is usually considered bad form, so to get into one it is best to check out the "Gamer Connections" section or the "Play by Post Discussions" section of the messageboards. I believe that an Ebooron campaign is getting ready to kick off soon and is recruiting in the Gamer connections area. The Savage Tide game I am in. We had a change in DM partway through. (I play as Terin the Beast.)

The Rise of the Runelords game I am in. (Dravite Schorl is my PC in this one.)

I'm really liking the whole Play-by-post concept, even though I'm pretty new at it myself. I'm still learning as I go, picking up things I might do differently, finding what works, but everyone has been very patient, and I can't wait to do a few more of them.
Your best bet is to keep a constant eye on the "Gamer Connection" section, as the games fill up fast!

Seriously, we're all adults here, right? And those that aren't should know how to act like one.
More importantly, what's the point of cheating on die rolls? You're only making it less fun for yourself and others, but mostly yourself. and heck, if you never fail a roll, and always confirm your crits, people will start to clue in, and not want to play with you any more.
I like Invisible Castle, and try to use it as often as possible, but I'm fine with the honor system. What boggles my mind is that the honor system is shocking and unheard of. Maybe if we try and bring it back, some civility will return to the world. And maybe that starts with me trusting complete strangers talked to over the aether. That's what trust is about, isn't it?

Like the rest of the conversation on the board, it just kind of rolls along as people post, and you post when you can post (so it's almost like you're constantly gaming!).
Combat is a little tricky, and different groups will handle it differently. The few combats I've been through in the couple of games I'm playing, the players will each roll initiative, and the GM will use one initiative for the bad guys, and anybody can post their action for a round in any order, and the DM will go back and describe the action over the course of the round in the proper order, after everybody's done. Then you move on to the next round.
I know other groups will do things differently, but I can't speak to the specifics of that.

One of your questions answers the other. Characters in PbP boards have reddish names because they have created an alias to represent their character. Your primary board name is blue and various sub-personas you create will be aliases with red names. Then you can chose a picture to represent your PC and have it linked to the correct name for your game. If you click on those red names in PbP threads it's a fair chance you'll be taken to their character sheet. You can put all your character details in the profile section of your new alias and it makes everything neat and easy.
To make one click on 'My Account' up top. Then click on 'Create new messageboard alias.'
