Bear in mind that acid can certainly damage the elemental ring holding the ship aloft. If you are going to do an airborne encounter, really emphasize that while they may be on an airship...Ilthane's a Dragon.
Stay at a distance as much as possible and use breath to try to bring the ship to a crashing halt. Only have Ilthane close to shorter range or change targets if one PC in particular is giving him problems, or if they have an Artificer repairing the Elemental ring during the fight.
You could also have Ilthane target the captain exclusively. Ilthane's not stupid. If the captain dies, they rest of the party will have to try and control the airship. A quick way to start removing combatants from the fight.

Well, we had are RL session, and the attack went well. The crew scattered, a few of the folks were shaken. Ilthane tore up the elemental rig, slowing the ship, but the druid's call lighting storm and the warlock's maximized eldritch blast did finally bring it down (though not before seriously wounding said druid and warlock). Overall, a nice, memorable encounter.
And the group being stuck way up the air afterwards was fun. :)
