Do the timelines of greyhawk modules directly corespond to years that they came out? For instance, did the Age of Worms campaign go from 595 to 596? Classic modules seem to have their own set "dates" for when the occured, such as Temple of Elemental Evil taking place in 579 cy. Anyone got any answers for me?

Though I am no expert, I would assume that the the parts of Greyhawk that leak out onto the pages of Dungeon and Dragon are current to the timeline unless otherwise noted. I am not certain that an adventure set too far in the past would be accepted unless it was by an established GH author.
Yet since the most of the adventures published do not delve too far into the politics of the world and it is mainly GH in geography and religion, only a small amount of adaptation would be needed to place them in any timeline.

Yeah; that's pretty much the way it works. Although technically, you can pretty much run the Adventure Paths at any time; the only reason inside the campaign for advancing the years is because they occur in chronological order; certain events in previous Adventure Paths set up encounters and events in later ones.
