So it took all of 4 rounds for the Beholder to wipe out My group.
Round 1- Ranger Dead from finger of death
Round 2- Rogue Asleep from Sleep ray, Wizard Paralyzed from spit.
Round 3- Bard Paralyzed from Spit
Round 4- Barbarian Distergrated (Rolled a 1 on save, he needed a 2)
So what did the rest of the you guys do after a full party wipe?
I was thinking of sending in the Striders on a rescue mission for the ones that Survived but were taken down.

Maybe they had friends, as you said the Striders, Jenya, others who can try something.
Maybe the two paralysed are not killed outright but given as amusement for other creatures, sold as slaves, kept as hostages.
I was thinking of Using the Striders in conjuction with another PC (one of the players missed this game). What is odd about this battle was that all saving throw fails was the result of 1s.

My TPK occured while fighting Moltenwing and I called it a "shared bad dream" they all had while resting on the astral plane. They had just come from the astral before the encounter, so it turned into out okay. Sort of cheesy, but okay.
For your situation, I would recommend having Vhalantru turn those who were sleeping or paralyzed into statues to add to his collection. Then you could let the group play as some of the Stormblades or Striders to execute a rescue mission. The stoned characters can be saved and then the dead ones can be raised or resurrected. Maybe Jenya has a scroll of Resurrection she's been saving for just such a dire occurance. Maybe even Meerthan has one he can give to the party.
Of course, if you let them use the Stormblades, then your party is indebted to them now and could make for some very interesting political drama later on during Foundation of Flame. Just imagine..."I saved your butt, now you owe me so vote for my dad for mayor..."

Ummm They are not in good terms with the Stormblades... they got into a fist fight with them and wiped them up... My adventure group got arested and flogged in public... They are still sore about that and are always looking for ways to get back at the stormblades *But the ranger had a crush on Cora*

My group similarly met the beholder this past week. First round, paralyzes the archer and moves up. Second round, Stoned the Warlock (and their only way out at the time), Killed the Cleric Cohort, and Charmed the paladin (told him to keep the animal companion of the druid at bay). Then paralyzed the sorceror with a spit.
With all but two now under his control, the end was near. Then the one missing player actually showed up. I invoked a bit of Deus Ex Machina, and had the Stormblades show up with him. Amazing what a monk can do when riding on a beholder's back. Especially when that beholder decides to focus his eye rays on that monk and can't seem to hit.
But in regards to the original question, I would leave it up to the PC's. My group had decided that in the case of a TPK, they would end the campaign. Other groups might want to be rescued and continue. Others would make new characters and continue. Talk to the players before you make any decision.
