It certainly would be too powerful if its effects stacked, but I think this comes under the rule that an effect or spell does not stack with itself. 8-)
Only the highest effect applies, I believe, and in this case, the maximum STR loss would be -10, I guess. Still a big hit, but not crippling for the giant...
Of course, multiple castings would kind of extend the duration, but you'd need to keep track of each STR penalty and apply it sequentially as each spell expires.

I would not suggest replaying the fight. just keep it as is and just make sure the players know you will be using the spell correctly for now on and explain why. That is what I do when I discover I was playing something wrong as a DM.

No don't replay the fight, send another fire giant of his family or have him raised for a part to come.
Before that explain the mistake you made to the players and don't bring the other giant to soon (the will have a bad feeling).
