I completely disagree with your statement about official APs, especially as a blanket statement because that is definitely not true. Paizo started their business making adventures for dnd 3.5, and their adventures are some of the most acclaimed.

Now, if you prefer making your own adventures, that is up to you. The mechanics are there and PF2E is not harder to use on custom campaigns than dnd 5e.

Soldier has a feature to substitute CON for STR requirements for armor. They could have done the same for Guardian if they wanted.

It seems to me you really want to play a broken caster and that is simply impossible in PF2e because it was designed to be balanced. There is no secret recipe, no secret builds, except with extreme homebrewing, it will be impossible to make a caster broken like in 1e. If that is not fun for you, it's fine, stick with 1e.
