Looking at the spell as-written, the target size limitation is only specified for the first level version of the spell. Since second level and higher make no mention of limits on the size of the target, you could argue that Large creatures can be targeted starting at second level.

I could be wrong, though.

Looking up things on Google, I found a lifepath generator that works with far-future settings in a generic way. Perhaps this could be a starting point for your players?

Seriously, though, the cast & crew of Pungeon Crawl: Mind the Gap made mention of these gigantic space faring raccoon-ships and I'm curious how to stat those out. OnCallGM said he'd do it, so I'm asking. :)
