I'd also like to throw my vote for option #4 into the hat. One of the reasons I love druids are their hybrid nature, and I believe this option gives the player the most flexibility.

Doesn't even have to be strictly horses. Raise sheep for mutton and wool. Raise cows for milk and meat. So many possibilities!

I can't recommend Pax Aeternum enough. The sheer amount of love they're pouring into this is awe inspiring.
