There is something wrong with having the DCs of checks be found in a confusing table. To illustrate let us look at the example of jumping over a 10 foot pit.
PF 1e: DC 10.... That's it.
PF 2E: First determine the level of difficulty. Is it 0? Is it 1? Is it 2? According to the rules-
"A high-difficulty skill DC can be overcome by a character who has increased their proficiency rank in a skill but doesn’t have a high score in the associated ability (like if a typical rogue were attempting an Athletics check).
This is the default difficulty in Pathfinder." Page 336
The only locations in the table that 10 shows up is level 0 with a low difficulty and the level 1 with a trivial DC. If we want to change the base DC that's fine, but it's rather confusing to have the table with difficulty "Levels" and yet explicitly state that the checks SHOULD NOT be determined by character level.
"It’s important that you don’t simply make the DC arbitrarily higher or lower with the PCs’ level." Page 336
Personally I find the table confusing and convoluted when compared to setting DCs from PF 1e. Give the base for the check and then allow a GM to make adjustments based on complications.
It also prevents people from mistaking the level on the side to indicate Character level and thus make the mistake of having a trivial jump over a 10 foot pit be a DC 29+ for a Level 20 character.
