On youtube check out a guy called Antti Mortikainen. He does all instrumental epic music, has a few old (but really good) pirate themed tracks, as well as an entire album called "Set sail for the Golden Age" that's really awesome. Also check out a group called Nox Arcana, they also do all instrumental stuff and they have a great album for S&S called "Phantoms of the High Seas"
