What happens when a Cleric of Erastil casts Holy Ice Weapon to create a Composite longbow?

Does it affect any creature struck by an arrow fired by the longbow with the extra 1 cold damage and the holy water effect?
A composite longbow and a longbow are two different weapons. Holy ice weapon would create a normal longbow.

It creates an ice Longbow, not composite longbow. It doesn't mention anything about projectiles, because it's assumed it will be a melee or thrown weapon. If you were using the bow as an improvised weapon, the bowstaff spell, or empty quiver style, the cold damage and holy water effects would apply to your melee attacks. I expect table variation on any projectiles fired by the weapon.

For purposes of weapon proficiency and similar feats, and that is all. They are different weapons with different entries in the weapons table and different descriptions. The line you quoted is an exception, allowing one feat to grant you proficiency in two weapons.

As Imbicatus said, technically the spell doesn't bring any projectiles with it. Although simply having arrows would fix that issue.

Yes. a Favored weapon is not Weapon Proficiency and similar feats. Holy Ice weapon is also not Weapon Proficiency and similar feats. It would create a longbow, which you can use all your composite longbow feats with. It would have a longbows range, and no STR rating.
