My personal fondness and experience with Brazilian Jiu-Jitsu prompted me to create replacemet wrestling rules for Pathfinder.
Comments and constructive criticism is appreciated!
I hope the "wrestle golem" blend of Pathfinder and Gracie Jiu-Jitsu trademarks is humorous enough that neither business will complain. I will, of course, remove it if requested

First, why would anyone ever choose to use the average of Dex and Strength? Sure there are a few corner cases where it might be to one's benefit to use the average rather than a single choice, but those are incredibly rare.
Secondly, you go out of your way to state that 'ability score damage to strength does penalize WAB' which both ignores those who chose to be dex-based wrestlers and brings into question things like temporary penalties to Strength. I highly suggest fine-tuning the wording here.
EDIT: also, your flowchart excludes grapples targeting the legs, torso, or neck.

Still excludes torso grapples (for example, to set up a belly-to-belly or belly-to-back suplex, or to cinch somebody up in a bodylock)

Those seem reckless in a group combat. But I have explicitly included them now, so readers need to be imaginative when using "Grab On".
Now an exciting example combat is included at the end of the page!
