I purchased a gift for my boyfriend as part of a multi item shipment. It turns out that he already had that item. Is it possible for me to return it, but for the creidt to go to him as a paizo gift certificate that he can use on his own account instead of back to my credt card?

Yes. When you send the item back, include a note with the order number it came from, your boyfriend's name and email address attached to his paizo.com account and that you want the credit to go to him.
