So my reading of the rules on multiple Apex items is you can get the stat increase only once but you can also get the nice secondary bonuses of apex items more than once.

So at high levels of might be worth spending the gold to to get the sweet defensive feature of the Gorgon armbands alongside my belt of giant strength ?

Honestly doesn't worth because Apex are pretty expensive. Maybe if you have a lot of extra money but probably there will be other good expensive items that you will want too.

But yes, the reading of the rules is correct. You can use multiple Apex items that you somehow have. You will only get the stat boost from one of them, but you can use the other benefits of the rest of the items.
