Does a monk's increadible movement ability apply to all speeds, such as flight or burrow?

Numerous other abilities also allow you to move, from Crawling to Leaping, and most of them are based on your Speed in some way. Note that many of a PC's secondary speeds are based on land speed, so in that instance the Monk's bonus would apply.
So if given a flight speed of 30', the Monk bonus adds nothing. But if given a flight speed = land speed then the bonus is reflected in having a greater land speed to translate into flight speed.
