In a recent game we run at our local shop a player asked this question. We weren’t sure of the answer so thought I should ask here.
Sleight of Hand, in the Core, says it can be used in lieu of a Profession check to earn money (under the guise of entertaining). The Society Guide says day job rolls can be had for a trained Profession.
So the question is: can a player with ranks in sleight of Hand but no ranks in Profession use that for a day job roll at the end of a Society module?

Only if they have purchased the Thieves' Guild vanity for 4 prestige points.
Thieves’ Guild (4 PP): Nearly every community, from the smallest village to the teeming metropolis, has a criminal underground, and most have one or more thieves’ guilds to look out for the interests of those on the opposite side of the law. As a member of one such thieves’ guild, you gain a +2 circumstance bonus on Sleight of Hand checks to steal items without being noticed. You can use Sleight of Hand to make Day Job rolls.

This is SFS, not PFS. Vanity doesn't exist as far as I know, so advice is not relevant.
SFS characters do not get Prestige Points. They have Fame and Faction Renown. Fame is the most similar to Prestige, but there are differences, and I have seen nothing to say that it can be spent on PFS vanities. There are no Faction Boons providing this capability, so I would say that this requires clarification by someone like Thursty.

For SFS, no, the Guide explicitly states which skills can be used (pretty sure Thursty has confirmed this)
Day Job: During Downtime, you can attempt one trained
Profession check to earn extra money
and (emphsis added)
You gain a number of credits equal to twice your Profession
skill check result, as per the “Earn a Living” entry in the Profession
skill (Starfinder Core Rulebook 146). You cannot use other skills to
make a Day Job check.
