So, I'm a little confused about what a subscription gets me. It sounds like you get a case of miniatures every time a new set comes out. Sets come out roughly every 4 months so you'd get 3 cases as part of the subscription. You also get the additional discount perks. However, there's something in the message about adjusting quantities based on your specific gaming needs. How do you adjust quantities if you just get 3 cases per year? Do you get any kind of discount if you say that you don't want a full case of minis?
I'm seriously confused on how this works and would appreciate some info.

You can subscribe for more than one case per set. Some people actually do exactly that. The base subscription is for one full case per set release, meaning three cases a year. But if there's a set you know you want more of, you can increase your subscription count. Later, you can decrease it back to one.
You don't get subscription discounts for orders smaller than a case. (Note: other discounts still apply, such as Pathfinder Advantage, for people who subscribe to the Adventure Path line).

Nathan, it sounds like you might be under the impression it's an annual subscription, like a magazine. It's not. It works more like your cable bill, in that it keeps going until you tell us to stop, and you can stop whenever you like. Also, you don't pay in advance, or even monthly—we charge you only when we ship your subscription. Does that help?
