Hey Everyone!
To start, I did do a (very quick) search and didn't find anything that answered my question.
I will be running Pathfinder at my local game store and I am deciding from just a regular game or turning it into a Society game to help the store out.
My question is this - The game will be run regularly (every Friday night) with likely the same group of players. What happens when the players get to say, level 8 and one of them dies and for some reason is not resurrected at the end?
According to the rules, they need to make a level 1 character. But since they will be out of level range for the other characters are they just out of luck or do the other players need to reroll as well?

As soon as you make it to level 4-5, every single person should role up a new character. Having this flexibility will be invaluable, especially if you decide to go and play with some new folks at a convention.
By the time they reach level 8 (or even 4-5), there should be enough resources so a character won't die. And in fact, remember the party can chip in gold to pay for one of their fallen comrades. I know this because there may or may not be a plethora of characters who have to rely on their party in this manner when they sit down at my table. :)
/In fact, it happened this weekend twice. Open rolling is a killer, especially when a PC doesn't make their saves.

Thanks for the response. Unfortunately my question still stands that if for whatever reason, if the character dies and does not get resurrected, do they need to roll a level 1 character or is there some way to get them to the APL of the group? Or does the group as a whole have to reroll to keep that player in the game?

If the dead character is not retrieved/ressed, then yes a new character would need to be created. All characters start at level 1 in PFS.
You can use the slow XP method for the higher part of the group and sanction modules (instead of scenarios) to try and catch up the character using those rules, but it would be a fairly time consuming endeavor. Once the new character got within scenario tier, they could switch back to those, but again it would take awhile to truly catch up.

That is what I assumed the case was. I am not really worried about it except that my players are not use to something like that and tend to hold grudges with each other. "You didn't do this thing I wanted 4 levels ago, so now I'm not going to help you." Kind of thing.
It is just a matter of setting the proper expectation with the players when I sit down with them and discuss the options. Thanks again to both of you for your responses.

As Joe said, a character that permadies is, well, dead. However if you have a group that really plays as a group, there should be very little chance of this happening by level 8 unless you are a particularly Cauboish (deadly) GM. The ways to raise in PFS are:
1) Cleric or other divine class casting raise dead on you.
-In the undefined time at the end of a scenario, a party cleric of at least 9th level at the start of the scenario can memorize and cast raise dead.
-You can pay the material costs for the cleric.
2) Paying for a raise dead using the "Spellcasting Services" listing in the organized play guide.
-Note that any character who completes at least 3 acts gets credit for the scenario even if they die. (This means they get the money for the scenario as well.)
-All party members who participated in that scenario (including the dead one) may pool money to pay for this.
-Anyone, including the dead PC, may sell items for half price to pool money for raise dead.
3) Have a party member use a scroll of raise dead (usually costs more than # 2).
4) Spend PA as noted in the organized play guide.
-Note that you may NOT pool PA for a raise dead, only money.
Finally (although not terribly satisfying) the closest thing to a solution for your original question is that if you have been applying GM credit to a character along with the group, you would have a level 8 character as well. You could take the dead player's place and have him or her take over as GM.
