That's the sound made when seven people ask to join your regularly scheduled PFS game all within three days of gameday.
I'm curious if anybody has ever had this happen to them and what their solution was. Obviously if the group was already near capacity there's a darned good chance that just aren't enough GMs to join in on such short notice, especially when this hasn't been an issue yet to date. Looks like I need to come up with a plan.

You have to be very upfront with everyone. 1 GM can only do so much. What I would do is offer to run your regular game you were already planning with 6 max and then overflow everyone else into the next week and give them first seating. This way you are respecting your established players by not asking them to take a bump this week and letting the new players know that you are willing to get them to the table as well. This also buys you more time to maybe get a 2nd or 3rd GM lined up for hopefully ongoing multi-table nights :)
