I'm primarily going to Paizocon for these reasons: To socialise with you guys, chat with the Paizo staffers & get stuff signed, attend most of the seminars, and maybe see some of Seattle proper. I'm not really going to play games.
BUT it might be fun to play in one or two games (as long as they don't clash with the seminars I want to attend). I'm interested in playing a fighter that I'll create using the PF rules, but that doesn't have to be 1st-level. What events might suit me? I'm not necessarily bothered about taking part in PFS games.
(BTW, I do have a cleric PC and played in one of the 3.5 PFS games, and he has 1 XP, so how do I go about switching that gold/xp/prestige point if I do take part in a PFS game, if those are the only options?)

You could convert your Season 0 character into a fighter and play in a PFS scenario (that's what I am doing). Conversion is easy, just check the PFS rules on the Paizo site. My understanding is the Society events should be easily attainable and very likely to have something that doesn't conflict with your other events. Unless somebody is hosting an open game on the side, I would think that most scheduled events will have pregens rather than you bringing your own character.

I took sort of the same approach last year...i.e., I didn't go to PaizoCon intentionally looking to game. I focused more on the other stuff. And...I had a blast! It's so easy to just hang out and chat up the Paizo staffers, people from the Paizo messageboards, folks from all over the country with a mutual interest in Paizo products, and attend some really informative and entertaining seminars. So it's really, really fun from that angle.
However, I did join in a game on Sunday morning. It was very ad-hoc, just whatever I could find that still had a slot available. Greg Vaughan was nice enough to let me have a seat at his table. And then...he proceeded to ruthlessly kill half the table's characters. :-)
As I said before...I had a blast!

Based on what you're describing, I agree that PFS games might be the easiest for you. Most of the other games will come with pre-gen characters to keep the focus on the game rather than character creation or approval of characters that players bring to the game with them. If you want a chance to play exactly the character you want, then my suggestion would be to either come with a PFS character ready to play in one of the open scenarios (i.e., there are plenty of Tier 1-7 adventures available). Or, if you can sit in on a game where the GM has pregen characters, just make sure you arrive early and claim the type of PC class you prefer to play ahead of time.
My two-cents,
