Okay, I know I'll be flying out of Texas.
My guess is that Seattle is the closest airport? Is that right?
What sort of transportation is available from Seattle to Bellevue?

Looking at Google Earth I see a kings County Int'l Airportl, but the flight planning websites don't give it as an option when planning a trip. Is Seattle the closest airport?

SEA-TAC airport is the closest airport (really).
There are shuttles from there that can take you to Bellevue -- depending on traffic it could take around an hour.
Alternately there is a bus that can take you to downtown Seattle, then you can catch another bus out to Bellevue. This is not for the timid.
A cab ride from Sea-Tac out to Bellevue is probably going to be around $45 (sort of a rough guess).

Shuttle Express is a van service that will take you from Sea-Tac Airport to the Coast Hotel (or other Bellevue hotels) for $20.
Sea-Tac is named so because it's between Seattle and Tacoma, and serves as the region's international airport. I believe its airport code is SEA.
The bus is a viable solution, but, yes, you would have to hop buses in downtown Seattle, and the bus won't drop you off AT the hotel. And be prepared for a 2-3 hr ride for the trip.
I only recommend renting a car if you are staying in the area longer than for just PaizoCon, to see the sites and stuff.
Now, if your site-seeing is limited to downtown Seattle (Pikes Place Market, Pioneer Square, SAM, Seattle Center) then taking a bus from Bellevue to downtown Seattle IS pretty fun and economic thing to do by Metro bus, because parking is real expensive in downtown Seattle, and the bus routes are pretty good.

There actually is a bus (route ST 560) that runs from the Seatac Airport straight to Bellevue. The trip takes 45 minutes or so, slightly more in traffic, and costs a few bucks. Of course, as mentioned above, it won't drop you off directly at the hotel. Its closest stop appears to be about half a mile away, according to Google Maps.
Though if you've got the $20 or so to spare, Shuttle Express (see Timitius' above post) is probably the most convenient way to get where you're going, assuming you're just going from airport to hotel and back again.
Edit: Unless you happen to be an attractive, available gamer girl, in which case the most convenient way to get where you're going is to hit me up for a ride, since I live just two miles from Seatac Airport.

I'm not sure about Shuttle Express in particular, but most van/limo services charge a flat rate for as many passengers as they're willing to carry, so if a few of you can synchronize your departures from the airport, you may be able to get a limo for a few bucks per person.

The bus doesn't get you as close so if you've got luggage it can be an issue. Shuttle express is ok, and if you've got a collection of folks going to the same area it's not too bad.
I use Seattle City Car http://seattlecitycar.com/ when I travel. They're very reliable and I feel they're worth the extra money.
If you're coming from Texas it depends upon the airport. Dallas the best deals are using American or Alaska. Houston is Continental. Definitely fly into SeaTac. Of course also always check to see what Southwest specials are running, but you'll have a transfer with that.
