I'm a mounted Summoner. My first feat was Arcane Strike, my second was Mounted Combat. It doesn't take a whole lot to make a pretty monster melee Summoner. Actually, if done right, you can be just as good as a Paladin, Cavalier, or a Fighter in combat. After a while though, you'll notice that the Paladin gets some major healing, the Cavalier gets better at charging, and the Fighter gets better at damage.

For a ranged route, I'd go with a more subtle route. After PBshot and Precise Shot, for 5th level, go with Weapon Focus then Arcane Strike. Your Eidolon should be whatever matches your character. But most important is if you go the mounted route, take Mounted Combat for yourself and take Combat Reflexes/Bodyguard for your Eidolon. This will either give you a bonus to defense or your mount a free dodge.

I had a druid communicate with the animals that I summoned, because I couldn't tell it what I wanted it to look for/attack.

Summon an eagle right behind an enemy while Rogue flanks.

Summon a Poisonous Frog to do exactly what you said.

I might be a Summoner in class, but it never says anything about the Summoner automatically comunicating with the summons... Unless you're talking about someone named Summonner... That would be wierd...

When you play a Cavalier do you roll once for the mount and once for the rider? Of course not. Why do it any differently for a class meant to do the same buisness, but with a little more imagination?

Talk to the GM before hand to understand how s/he would do it.I just roll and take the lower score, luckely they are the same, so that helps...
