I've noticed that the only things mainly appearing for pre-order are the remaster books. I have not seen anything for setting or next adventure path. Are they on hold?

After that is the 4 part "season of Ghosts" set in Tian Xia.
After that is a megasized single part adventure set in Sandpoint for the 200th AP issue.
I don't think 201+ has been fully announced yet, but I believe they did confirm it ties into a war of the gods.
We now know (from the live stream today) that it is a war of the immortals, which will include a god dying, but seems like it will be introducing a lot more ways for mortals of Golarion to become immortal.

Missed a lot of the stream, so had no idea if war of immortals was an AP, a rulebook, or just a overarching theme.
That will be the title of the rulebook, which starts off with the death of shod, exploding in the sky…so god goop everywhere. That seems like an event that won’t be happening in an AP to me but what do I know?
