The first bestiary has a set of random encounter tables, but obviously they only include things from the first bestiary.
Is there any place I could find a table with monsters from all four books?
I've been looking, but so far I've only found a digital encounter generator - I'm looking for something printable instead.

I suppose there is some 3rd party product, but, in my experience, they are mostly generic. Not the best stuff, as they don't consider your party level and have limited consideration about the environment.
Several AP and adventures have specific encounter tables that are more appropriate for the PCs levels and the terrain.
Several people posting on the forum have prepared complete or almost complete databases of the creatures based on the environment where they live and generated their own encounter tables from them, maybe someone will share them.

Just to make sure, does the 6th one have all of the information from the others?
Each book contains different monsters (the Bestiaries often have reprints of monsters from the APs and from the Tome of Horrors), and they don't contain information about monsters in previous bestiaries.
P. 314 of the Bestiary 6 says:
APPENDIX 10: MONSTERS BY TERRAIN
The following lists group this book’s monsters by terrain. Note that there can be a certain amount of crossover in these lists.

Some of the monsters in the bestiaries have rather bare bones descriptions. Are there any sources where one can learn more about their ecology and culture? (for example planar dragons. I met one in the computer version of Wrath of the Righteous and would like to know more)

The bestiaries in the AP modules generally have longer pieces about the monsters, often with notes about their habitat and ecology. Sadly, the planar dragons in the AP module n. 147 don't have it.
Older versions of the game generally ad that kind of information, but today the statistics take up too much space, and the developers try to keep the description all on one page.

there is a long history of creative writing revolving around the various DnD monsters. As PF is a spin-off of DnD3.5 you can use those older materials where the creatures are similar.
