So I have been making a character who is a Mesmerist Dreamstalker. But I have found nearly ever creature has god damn sleep immunity. Has anyone found a way to bypass this overly common immunity or is this character doomed to fail?
I don't think too many creatures have a immunity to Sleep, but there are a lot with immunity to Mind-Affecting spells and powers in general.
The Psychic Inception Stare is probably what you are looking for: Of course, it won't help you against elves...
Just don't expect a lot of sympathy: The Slumber hex is generally considered one of the most ridiculously overpowered abilities in the game...

This is why it is not a good idea to create a one trick pony. My advice would be to choose some spells that are not mind affecting spells to help you deal with creatures that are immune to mind affecting effects. Looking over the Mesmerist spell list I see a few illusion and conjurations spells that are not mind affecting, pick up some of those to deal with immunity to mind affecting effects. You don’t need a lot of them, maybe one per spell level. Most of them are useful in their own right so you are not really giving up anything. Shadow conjuration and shadow evocation are always good spells for a caster with a limited number of spells known.

The following creature types are immune to sleep Construct, Dragon, Ooze, Plant, and Undead. Of those all but Dragons are also immune to mind affecting effects. Vermin are also immune to mind affecting effects, but not sleep. The fact that vermin are immune to mind affecting but not sleep indicates that overcoming the mind affecting does not overcome the sleep. Most if not all sleep effects seem to be mind affecting effects. All the spells and sleep related abilities of the Mesmerist seem to be both. I don’t think there is a way to overcome both immunities.
This is a weakness with the archetype that does not look like you are going to be able to fix. What you need to do is to come up with other ways to affects those creatures. Like I mentioned in my earlier posts there are some mesmerist spells that do will affects these creatures. Spells like Grease and Glitter dust will work on those, as will Shadow Conjuration and Shadow Evocation. The Mesmerist is also a CHA based class with UMD as a class skill. Pick up some offensive wands and use those on things that are immune to sleep. A wand of magic missile works great vs a lot of those types of creatures. If all else fails, you are still a medium BAB class with proficiency in all simple weapons. Pick up a crossbow or sling for when you have nothing else to use.

The issue with 'immune to sleep' is that many creatures with this immunity are basically alien to the entire concept of sleep, so bypassing it generally won't be an option.
It's sort of like trying to drown a rock: It's just never going to work because a rock doesn't breathe...
If you are in a campaign where 'immune to sleep' creatures are a major part, you might just want to consider rolling a new character. If this is just a random adventure sort-of-thing*, then you might just want to muddle through particular adventures...
*I played a bunch of PFS Season 0 adventures with a group that had a +4 CL magic missile sorcerer build and was amazed how many 'immune to magic missile' foes we actually ran into.
