One-shots for mounted characters

Hello everyone, first post here. I ran a level 1 PFS scenario (Lions of Katapesh) to try out PF2E and Foundry, and we had a blast. I'm looking to run another one-shot, potentially another PFS scenario, but at level 5 with some optional rules. We are not overly concerned with typical PFS legality and such, just treating this as a one-shot that I can tweak as needed.

One of my players is interested in playing a mounted knight, decidedly human on a horse, which I understand to be a problem in many situations Pathfinders find themselves in. I've been looking through my options for a PFS scenario that could facilitate a mounted knight without too many changes, but it's hard to tell that there won't be a sudden problem with it. Ideally, the horse shouldn't have to be left outside of an important fight.

These caught my eye:
The King in Thorns (2-00)
In Burning Dawn (2-10)
Lost in Flames (2-14)

If anyone has experience with these and could weigh in on their horse-compatibility, that would be most helpful. Otherwise, if anyone knows of anything else that would be suitable, please point me to it. I'm prepared to just homebrew the one-shot instead, but I'd like to try to run another pre-written scenario again for the experience. Thanks!
