Would a Deer instinct at level 5 hit for 1D10+6 damage? Am I missing any bonuses?

And at level 7 would he be hitting for 1D12+9? Or are there any bonuses I am missing again?

It depends on your strength score. Also, I would recommend using handwraps to get striking runes.

With a +4 STR at level 5, 2d10 +6 looks reasonable to me.

And by level 7 you won't have a +5 STR bonus possible yet, and greater striking is still out of price range, so 2d12 +9 looks good.

I'm going to assume you're working with 18 STR at character creation and 18/19 STR at level 5 to account for the extra 4 damage at level 5

At level 7 they get Weapon Specialization

"Your rage helps you hit harder. You deal an additional 2 damage with weapons and unarmed attacks in which you have expert proficiency."

So at 7, since they gained expert in unarmed attacks at 5 with Brutality, I believe they'd have 1D12+11 damage, again assuming 18/19 STR

edit: and derp, yeah by 5 they should have striking on their handwraps so like breith says, base die (assuming they do have striking) should be 2D10 at 5 and 2D12 at 7

Ah, yes. Weapon Specialization would add to that at level 7.
