If you have the Paralyzed condition, and somebody casts Fireball or Black Tentacles does the enemy automatically fail? Because nothing is written in the condition description and it wouldn't make much sense if they could prevent black tentacles or say a fireball from hitting them, the question would be would they fail or critically fail the save?

Paralyzed characters do not auto fail saves, nor is their AC penalty any more severe than Flat-footed. From a simulation perspective, this is very odd, but hey, in the Hazard section of your CRB, you'll also find reflex save modifiers for inanimate objects (though not all objects have them).
The reason for this is probably so that paralyzed characters aren't immediately murdered with a whole series of critical hits.
If you choose to houserule this, in order to be more simulationist, then whether they fail or critically fail is up to you.

We just had a table discussion about being able to breathe or hold one's breath while paralyzed.
It was decided that, since paralysis prevents actions, and since breathing or holding your breath didn't take any actions, that you could still both breathe and hold your breath.
We were stuck in a gelatinous cube at the time. XD

That is a fair course to take. Paralysis wouldn't stop your ability to breath, unless the rule stated it did in which case it would be much more deadly. So you should be able to hold your breath and use any ability that allows you to hold your breath longer, like Breath Control.
