Play by post is a very long form game, where players use things like forums, or a discord channel with a dice roller bot, and play a game session over the course of weeks, as people can get to it, instead of hours.
Regarding Fantasy Grounds, Society scenarios can certainly be played that way, and I think that the dice tower feature would be very handy for 2E, with the expansion of secret rolls, though I have seen a lot more people running things on Roll20.

I haven't played a game of Society yet. Would like to though. Ya I think more people play on Roll20 because its Free (I was one of those people before), then I decided to spend some funds on a better experience and it was definitely worth it.

There are plenty of Society games run in real time on virtual tabletops (Fantasy Grounds, D20 Pro and Roll20 being the most popular). We also have a few discord communities that involve both PbP and VTT games for Pathfinder, Pathfinder 2nd Edition and Starfinder (and even some ACG organisation!) and are a great place to find games and meet other online players.
There's no guides I've seen yet specifically for PF 2nd edition but this is a good one explaining PFS in general from a players perspective which should still mostly be accurate, written by the lovely Big Norse Wolf.
A lot of VTT games are organised by discord servers, you can find what is probably the most populous one here, which is run by the Online Region Venture Officer team; Org Play Online
If you're set on only using Fantasy Grounds then you will definitely find that there's a much smaller amount of games that are an option for you though I'm afraid as a significant amount of the VTT community uses Roll20 or other formats.
You can also find the Fantasy Grounds discord server here, which has a channel for PFS games.
There is also a section of the FG website specifically for PFS which might prove a good place to start! You can find them here.
