Where did superstitious barbarian go?
What happened to ranger favored enemies like fiends or undead?

They are not available in this edition. Not yet, anyway.
Though with Favored Enemy it's worth noting that, while the Feat is okay, it's not nearly as necessary as the PF1 version, you can easily be a dedicated undead or fiend killing Ranger and just not take that Feat.
