Hasn't paizo explicitly answered this question a couple times? I can't find the old blogs, but I'm pretty sure one of them had "why second edition".
When PF1 launched Lisa said they’d likely do another edition at some point, but it was a long way off.
They’ve never said they wouldn’t put out a second edition. They’ve repeatedly said “we’re not planning one” at various points during the last ten years. I suspect you’re remembering one of those times where they meant at that time.

Nah, this was something close to the announcement of 2e. Not sure if it was a blog or a dev post, or maybe a video.

I do not recall anyone from Paizo ever saying that. That being said I don't expect it to take to long for them to do a third edition. Pretty sure they ran out of ideas for first, decided that 5th edition was the best version to copy and refine due to popularity like they did with D&D 3.5 for first edition and eve online for pathfinder online and will re-release a lot of 1st edition stuff in second edition format, and then release a third edition when its clear second edition was a move in the wrong direction or was a critical success but can not monetize it any longer due to running out of ideas again.
I don't hate second edition, I just don't see a reason for it over first edition since it feels so much like D&D 5th edition.

Yeah, you’re right. They put up an FAQ explaining this as they announced PF2.

I mean...yeah, there'll probably be a new edition eventually as they run out of material/it becomes bloated, but I would expect it to take another ten years or thereabouts.

I find this reaction mind boggling. Aside from both having a shorter skill list than PF1 and using something called 'Proficiency' pretty widely there are almost no similarities between the games.
Feats are rare and optional in 5E, while they're the heart of PF2's design (people mostly range from 0-6 Feats in 5E while the lowest number of Feats a PF2 character gets is 21, and the highest is over 30). Level is much less meaningful in 5E than in PF1, while it's more meaningful than it's ever been in PF2, and so on. Really, aside from both having more coherent core mechanics, the two have gone in almost completely opposite directions in a lot of ways.

I can see the 5E comparison on a very broad strokes analysis: if you measure games on a single axis of “complexity” (or whatever term you prefer). PF1 is much more complex than 5E and PF2 is less complicated than PF1 - therefore it’s closer to 5E.
I generally find it unhelpful to try to describe games in terms of their similarity to other games, but maybe it’s a useful shortcut for some people to get a handle on a new ruleset.

I see a few tips from 5th Ed (spellcaster mod to spell attacks, etc), but overall, it would seem PF2 went out if its way to not be like 5th Ed, in many ways.

Why was a 2nd edition created when Paizo said they would never do this?

Paizo said nothing like that. Ever.
They stayed with 1 ed for 10 years and that's a decent long run - kudos for that!
I'm not a fan of the new system - but nobody got cheated, or lied to -
