Can I hold multiple Freezing Sphere's at once?

Freezing Sphere says you can hold the spell for lvl/rounds and throw later.

Is there any reason you could create and hold 2+ charges like an armful of snowballs?

Pretty sure there is a line in the "hold spell" rules that says you lose any held magic when you cast again.

Unless freezing sphere has some wording about being able to cast while holding, I believe you can not.

Zwordsman is basically correct. It's touch spells only, but freezing sphere counts.

You can refrain from firing the globe after completing the spell, if you wish. Treat this as a touch spell for which you are holding the charge.
Touch Spells and Holding the Charge: In most cases, if you don't discharge a touch spell on the round you cast it, you can hold the charge (postpone the discharge of the spell) indefinitely. You can make touch attacks round after round until the spell is discharged. If you cast another spell, the touch spell dissipates.
