You aren't likely to find a perfect fit. In a game that already encourages 15 minute adventuring days, a character that is only strong 15 minutes per day is stock.
Maybe a level of barbarian? The rage could act like the noon power.

The titan mauler at 15th level can enter a titanic rage which acts like enlarge person, however because it is a Su power it will work with the spell or potion of enlarge person. I also had him take the pride drawback, giant-blooded and sun blessed. Although the lesser version of elemental blood and elemental rage both do the same thing and need swift actions in order to activate, I got them because the ore powerful versions are what I needed. My version he hailed from Irrisen, on the day of his birth the elemental plane of fire leaked into the realm, giving the character ties to a fire giant.

Just because it's an su doesn't mean it will stack.

When you say "giant blooded", do you mean the human Giant Ancestry trait that gives you +1 CMB and CMD but -2 Stealth for the cost of Skilled? Or the Giantslayer's Campaign trait?
Here is how I would do it for a NPC:
Fire Kinetic Knight multi class Paladin. The burn system already gives the stat boost for large (eventually huge). Give him Rhitta as an item that is attuned to him to focus his abilities. Reskin a holy avenger :
This +2 cold iron Great axe becomes a +5 holy cold iron Flaming burst called great axe in the hands of Escanor

By saying the command "Sacred Treasure Release"「神器解放じんぎかいほう Jingi Kaihō」, Escanor can release all the power he has stored in Rhitta in an instant. The release is accompanied by an incredible wave of light and heat, illuminating the night sky and causing onlookers to mistake it for the sun itself. He can call it to himself at will, and it will travel at incredible speeds through the sky to reach him.[1] By having enough stored power, Rhitta also allows Escanor to assume his daytime form at night.[2]
Charge & Fire「充填チャージ＆放射ファイア Chāji & Faia; literally meaning "Fill & Emit"」: Rhitta's special ability is to completely absorb and store the enormous amount of heat Escanor radiates from his body during the day. This allows him to release the heat on command and with precision instead of simply burning away everything in his vicinity.
This is why I gave it Flaming burst and called.

Here’s my go.
He’s really tall for a human, so was thinking human with giant ancestry, replacing skilled.
For traits, go Sun-Blessed and Giant-Blooded.
Class is primalist bloodrager with fire elemental bloodline. A few of the rage powers would be Regenerative Vigor, Summer Rage, and Unrestrained Rage. Because who decided that he was paralyzed?
Cruel Sun is harder to emulate, but flaming sphere and fireball would be easiest.
His weapon is a large +3 called furious growing dwarven war axe. Likely made of fire forged steel. The same material goes for his armor. Normally full plate, but would be +1 moderate fortification breastplate for this build.
Finally, three levels of paladin for smite as no defenses can stop his strikes, and the courage aura. Escanor isn’t afraid of anything as nothing is mightier than he.
It’d be unnecessary, but I’ve seen people bring up mutagen for extra Strength would be an idea. Mutagenic brawler would be sufficient. Emulate his High Noon powers a bit.
Feats would include Exotic Weapon Proficiency, Power Attack and Extra Rage Power to pick up a few things would work.
If you’re allowed them in your game, the Pride drawback would be cool to have. And if somehow you can get the Pride Shard artifact too, all the better.
Speaking of “if you’re allowed”, I found a 3PP feat called Lighten Weapon. You can find it on the d20pfsrd. This lets you use a two-handed weapon with one hand. Rather fitting considering Rhitta is supposed to be a one-handed weapon, but only for Escanor. This means you can switch out the dwarven war axe for a buchering axe instead.
Another class option is, if you don’t mind the chaos aspect, is going two levels of brute vigilante so you can enlarge yourself. Personally, going bloodrager gives you access to enlarge person as a spell.
Other cool spells that make give you the Escanor feel are: fear the sun, flare burst, gusting sphere, draconic malice, fireball, force punch, heroism, versatile weapon, and greater flaming sphere. Stoneskin or resinous skin are probably the best two spells to represent “The One”. Although that may need to be a custom item that only works 1/day.

I actually went and made him as a pure fire kinetic knight. To emulate Sunshine; I gave the advanced and giant template during day time (using an electronic character sheet it is a press of a button that grants these changes) . With a starting STR of 14, in day time it becomes 22 to a 24 (31 con fully buffed) as he starts takings burn. His kinetic blasts can emulate the majority of his ranged powers. I’m very happy with how the npc turned out
