Looking for a solid low CR like 3 either already undead spider like creature or a good template to add to a spider.
Its to encountered in some sealed caves full of necromantic magic.

A giant spider is CR1. Just give it 3HD, a standard undead template (immune to mind affecting, ice, etc) and maybe an undead ability, such as grave touch.

both the zombie and exoskeleton templates would work. The latter actually describes your scenario in the flavor text which describes where these kinds of creatures can be found.
