There are multiple conversations on mounted combat going on right now. It is an area of the rules that is somewhat unclear. The following are links to a series of Rules of the Game articles for D&D. While they may not follow the written rule exactly and/or sometimes add assumptions to the rules set, they provide a decent system of play for mounted combat. Some adjustment may be needed for differences from D&D to PF, but it should be minimal.

Some questions without asnwer :(

Do i need a free hand for this action?
Do i recieve the benefit against all enemies from all sides ("facing")?
What action can i do in the cover position ( no attacks and spells but using a wand, trinking a potion?)?
Can i stay in this position for several rounds?

PRD Ride Skill:
Cover: You can react instantly to drop down and hang alongside your mount, using it as cover. You can't attack or cast spells while using your mount as cover. If you fail your Ride check, you don't get the cover benefit. Using this option is an immediate action, but recovering from this position is a move action (no check required).

1. The rules don't say. I would say yes. If a player wanted to try it without a free hand I could see it taking an Acrobatics check or a higher DC.

2. Yes. The lack of facing in the game represents ongoing movement and repositioning. The mount might be turning in place, for example. If your game prefers a more concrete approach, then in some situations (mount is moving in a given direction), I could see ruling that the rider cannot get simultaneous cover from enemies that are otherwise flanking.

3. Whatever seems reasonable to player and GM. The rules don't set the line other than at no attack/spell casting. My tendency depends on how often this comes up. If infrequent, I'll rule on the cuff in a way that gives a player tactical options and is fun. If it becomes a habit, then I work out my thoughts in detail.

4. The rule is that it takes a move action to exit the covered position. In practical terms, my experience is that characters pop up at first opportunity and it's a non-issue. Several rounds seems reasonable; longer than that and some additional check to maintain the stressed position seems reasonable...maybe Ride check increasing by +2 per round or something like that.
