Like above, Boston is one of those bands for me. Their music has always just plain made me happy.
But it's so hard to choose anything else. WASP's "Hallowed Ground" really got to me when I first heard it. "Crystal Ball" by Styx is another one. There's a bootleg version of the song with a verse that didn't make the record that really makes me wish the song were longer. I've recently discovered a funk band called Here Come the Mummies whose nearly every song is like this to me. Just so many songs by so many artists over the years. Music has always played a very important role in my life and so it's a very hard thing to narrow them down.

Led Zeppelin's take on "When the Levee Breaks"
"One For My Baby (And One More For the Road" Especially Sinatra when he brings his a-game.
"Il Sogno Di Doretta." I prefer Leontyne Price, but there are lots of beautiful takes on it.
"Oye Como Va," the Santana version.
