We want to use pawns for PC's, NPC's, Creatures and Ships. Will the Core Rulebook Pawn Collection cover the needed pawns to run the first adventure or first couple of adventures? Is the Alien Archive Pawn Box needed as well? Or are there still NPC's, Creatures and Ships that will be missing a pawn for the Dead Suns Adventure path?

You’ll probably be able to cobble something together, but if you’re a stickler, there’ll almost certainly be some boss or NPC you’ll be missing.
Typically (ie in Pathfinder) they have released pawn sets after the AP has been completely released. I’d guess it’ll be the next pawn set after the pact worlds set (due in May) so perhaps somewhere between July and September(?)
As I understand it, the art for issue six doesn’t come in until the very last minute so they aren’t able to produce a set before then (unless they skimped on some of the final book monsters).
Things might be different in Starfinder, of course. I haven’t even heard it confirmed that AP Pawn sets are going to happen.

I have the Alien Archive and Core Rulebook Pawn Collection, both. Neither of them contain any of the monsters from the back of the APs I've gotten so far (that I could see). They're also missing the ones from First Contact that didn't make it into the AA book (I think it's just the Space Pirate). They do have the ones that are in the CRB or Alien Archive.
I only have the PDF for the 3rd AP (I bought the other two before subscribing), but it doesn't have pawns for printout in the PDF. Unless I'm missing something, I wouldn't recommend buying the PDF for the pawns, because as far as I can tell it doesn't have them.
My group still uses the WotC mini's from 3rd ed, so we can make do with whatever. If you're going to buy one of the pawn collections, I recommend the AA one. It has more pawns and it comes with bases. Most of the ones in the CRB one are ships and PC races, and there are no bases.

For $25, I hope it's more than just a couple sheets of pawns. It really needs to be multiples of all the monsters and some of the NPC's in the full AP. Is that what they normally do with AP pawn collections? I've never used any of the PF ones.
I haven't ever counted them, but my impression is that it's usually about half a dozen sheets of pawns.
They're a bargain compared to the other option (ie minis).

A Pawn Collection contains 8 sheets of pawns. While Pathfinder Adventure Path Pawn Collections contain most of what you need to run all of the encounters, they do assume you can grab pawns from Bestiary Pawn Boxes for some basic monsters. I am striving to ensure that the Dead Suns Pawn Collection has just about everything you need! With the except of pawns for Gargantuan or Colossal monsters, which don't fit on our pawns anyway!

ugh. September? *cringes* I might get my minis from Ninja Division's kickstarter by then.
I DID get lucky and got an Akata from the Pathfinder prepainted Legends of Golarion set that I think I'm going to use for those encounters. Though I only have 1. I'll have to use a dummy placeholder for multiples.
